We use chocolate almond milk and Nutiva hemp powder for our smoothies. I've actually been known to make a hemp milkshake with the chocolate almond milk. It's makes an excellent snack, and since it's protein, it keeps hunger at bay for a couple of hours. <br />

On occassion, when we're too lazy to use real fruit, we'll throw in one of Yoplait's smoothie mixes. I know, I know, not vegan, but it's a rare treat. And since we don't use real milk, the yogurt is the only dairy in the smoothie, so the lactose doesn't bother me.<br />

Yesterday, we made one of the Yoplait smoothies. The chocolate and strawberry one is our favorite, and it's really chocolatey since the almond milk is chocolate too.<br />
<br />
So here's how I make these tasty smoothies. I use a Cuisinart blender, and I put in 3 and 1/4 cups of almond milk in it:<br />

Then I add about seven tablespoons of hemp powder. One serving is actually three tablespoons, but since I'm making two smoothies, I double it. And since I add a little extra milk, I add a little extra hemp powder (I don't use a full seventh tablespoon).<br />

I mix the milk and hemp powder until it's smooth. Sometimes the powder gets stuck on the sides, so I have a spatula handy to scrape the sides, and then I mix the milk and powder again. <br />

Then I add the Yoplait Smoothie Mix, or the fruit if I'm using fresh or frozen.<br />

On occassion, when I'm really craving chocolate, I'll add one or two tablespoons of dark chocolate cocoa powder and a little extra milk. If you don't add the extra milk, the smoothies come out too powdery.<br />

Like most people, this person thought that taking too much vitamin C could be harmful rather than beneficial. <br />

A few months ago, I read the book "<i>Vitamin C: The Real Story</i>" by Steve Hickey, PhD. and Andrew Saul, PhD. This book taught me so much about this miracle vitamin.<br />

For example: The RDA of vitamin C is 90 mg for men and 75 mg for women, which is barely enough to prevent scurvy. Why the government thinks women need less than men is beyond me.<br />

But, I digress...<br />

Did you know that most animals produce their own vitamin C? In fact, so did humans at one time. We lost the ability to produce this vitamin, most likely because it increased the ability of the human race to survive in times of starvation because it decreased our energy requirements. However, the loss of this ability has increased the incidence of arthritis, cardiovascular disease, and cancer among other things.<br />
<br />
At the time, humans got their vitamin C from their diet, and it is estimated that our ancestors ingested about 9,000 to 10,000 mg <i><b>PER DAY. </b></i>In this day and age, we don't get anywhere near that.<br />
<br />

What is Vitamin C?</h3>

Vitamin C, or ascorbic acid, is a cofactor in a number of different enzymatic reactions. It's also a potent:</div>

<li>Antibiotic</li>
<li>Antiviral</li>
<li>Antihistamine</li>
<li>Antioxidant</li>
<li>Antitoxin</li>
<li>Antidepressant </li>
</ul>
Vitamin C is necessary for the production of collagen, a protein that makes up muscle, ligaments, organs, skin, bone, and cartilage. Without it, the result is scurvy, which can be deadly. It leads to loss of hair and teeth as well as bruising, bleeding into the joints which causes edema (swelling) and severe pain. Some of the early symptoms of scurvy include:<br />
<ul>
<li>Fatigue</li>
<li>Increased susceptibility to stress</li>
<li>Depression</li>
</ul>

Megadose Therapy</h3>

Megadose therapy involves massive doses of vitamin C, typically anywhere from 2,000 mg to 20,000 mg every day or more. The goal of doses this high is to completely saturate the blood plasma with the vitamin. </div>

Many people think that taking high levels of the vitamin is dangerous, but this could not be further from the truth. Vitamin C is safer than milk! It <i><b>DOES NOT</b></i> cause kidney stones, in fact it prevents them. It also prevents gallstones by facilitating the break down of cholesterol in the gallbladder.<b> </b></div>

In the book "<i>Vitamin C: The Real Story</i>," Andrew Saul has this to say about the safety of vitamin C:</div>

So, I decided to conduct my own experiment. <br />
<br />
My husband came down with strep throat shortly after I finished the book. He had the characteristic little white pustules on the back of his throat as well as redness and pain. <br />
<br />
As you probably know, strep throat is especially contagious bacteria. I, too, came down with it. However, I realized the symptoms early, and I began a regimen of a gram (1,000 mg) of vitamin C every ten minutes until I hit bowel tolerance (which took about an hour). <br />
<br />
<h4 style="text-align: center;">
My symptoms were gone in four hours.</h4>
<br />
I gave my husband two grams of vitamin C before he left for his doctors appointment. When he came back, the white pustules were gone and he said his doctor couldn't see them. The doctor told him he probably just had a cold and gave him <a href="http://kinectweightlosssuccess.blogspot.com/2012/12/antibiotics-should-you-take-them.html" target="_blank">antibiotics </a>and sent him on his way.<br />
<br />
Greg filled the prescription, but didn't want to take them. I completely understood why, so I gave him 4 grams of vitamin C and then 1 gram every 10 minutes until bowel tolerance. Both of us took one gram every four hours to maintain blood plasma levels. <br />
<br />
We were completely cured in 24 hours, and our daughter never caught the bacteria. This little experiment proved to me that everything I read was true.<br />
<br />

How to Take Vitamin C</h3>

When you begin taking vitamin C, you should start by taking 500 mg every hour or two until you reach what is known as bowel tolerance. This is a bad case of diarrhea, which is unmistakeable. It's also uncomfortable, but it only has to happen when your dosage is adjusted.<br />
<br />
The dosage you should take daily will be about 50 to 90 percent of what you took to reach bowel tolerance. You can't take the dose all at once, however. Vitamin C has a very short half-life, approximately four hours. This means you'll need to take it every 4 hours to keep the amount of vitamin in the blood plasma at a constant level.<br />
<br />
It also needs to be noted that the vitamin C molecule is almost identical to glucose (sugar). If taken with glucose, vitamin C is flushed instead of absorbed because the body gives precedence to glucose. What does this mean? Don't take the chewable vitamin C tablets. They are made of mostly sugar, which means very little of the vitamin will be absorbed.<br />
<br />
The amount of vitamin C the body needs varies by health. If you're sick, your going to need a much more than when you aren't. So if you catch a cold, you'll need to increase the dose of vitamin C until you reach bowel tolerance again (like I did in my little experiment).<br />
<br />
Do not shy away from vitamin C if you're pregnant, or plan to become pregnant. Most children are born vitamin C deficient and scientists in Australia have found that SIDS may be a result of infantile scurvy. Many pregnant women will need over 10,000 mg a day by their third trimester. I haven't really done all that much with this blog, which is really a shame because I've come up with some great vegan recipes over the past year.<br />

But I didn't have any direction, and I had no idea what I was doing. </h4>

I was new to blogging, and being a <a href="http://daughterofmaat.com/" target="_blank">WAHM </a>in general. I quickly became overwhelmed with the typical duties of a mom such as<b> </b>cleaning, and taking care of our daughter. Like most people in the current economy we also had (and still have) our fair share of financial issues, which only added to the stress.<br />
<br />
Our financial problems just seemed to spiral out of control after Greg (my husband) was injured at work. He was denied workman's compensation and the ensuing legal battle moved my freelance writing/blogging career to the back burner, and then off the stove entirely.<br />

Greg still can't work, and we're still having financial difficulties, but I'm in a better place now. During the past year, I've learned quite a bit about how to be a vegan on food stamps, and how to remain a vegan even when you're completely broke and the cheapest food available is made from Goddess knows what.<br />

It sucks.</h4>

But we got through it. I refused to go back to eating meat and so I found ways to avoid meat and all the processed crap. We still had nutritious, and more importantly, delicious meals despite the fact that we were (and are) living on a meager pittance courtesy of the state. But at least there's food on the table.<br />

I don't like to admit that we have to use EBT to purchase our food, no one does I suspect. But you have to do what you have to do in tough times, and times are really tough right now. I'm lucky enough to make a few hundred dollars a month to keep the lights on, but that's about it.<br />

So I'm changing the focus of this blog. </h4>

I'll still be posting recipes, but I'll also be adding a lot more. I know there are a number of moms out there who really want to go vegetarian or vegan, but think they can't because they think it's too expensive, they're on food stamps like we are or they just plain don't have the money. But it can be done.<br />
<br />
I'm going to be adding vegan health news, juicing recipes, and shopping tips. I'm also going to share my experiences. Kids don't like vegetables, and even though my daughter is vegan, she's not all that happy about it. So I'll be sharing tips on how to make yummy meals your kids will actually eat along with ways to get them involved in the process.<br />

This isn't going to be just another vegan recipe blog.<br />

But, at least we'll save some money on peppers, basil and arugula!! I had redina lettuce as well, but I think a few rabbits ate the leaves. I woke up one morning and half of them were gone!! If anyone has any ideas about how to keep rabbits out of a mini-garden, please leave a comment!!!</span><br />

new homes. We decided to do mostly container gardening since this hurricane
season is threatening to be active. It’s easier to bring containers inside than

almost weekly at the store! We go through a ton of salad greens, obviously. One
of the greens we splurge on is a container of pre-cleaned spinach and arugula
(although I’m really not fond of arugula). The container the mix comes in is <b style="mso-bidi-font-weight: normal;"><i style="mso-bidi-font-style: normal;">fantastic</i></b>
for replanting seedlings!<o:p></o:p></span></div>

pepper plants took forever to germinate, but it was well worth the wait. They
are the best looking seedlings we have! I’m not sure our lettuce is going to

and the sun hasn’t been seen in three days. The little seedlings have obvious
signs of not getting enough sunlight. <o:p></o:p></span></div>

So, I decided to use my hubby's suggestion and plant them in the spinach mix container. I was surprised to see how well it worked as a planter. I poked some holes in the bottom for drainage, and the lid makes an excellent catch tray for excess water!</span><br />

<span style="font-family: Verdana, sans-serif;">I've eaten sunflower seeds before, but I'd never put them on salads. This was my first salad ever with the little seeds as a topping. This salad was made in about 5 minutes, and includes: broccoli, green leaf lettuce, cauliflower, green onions and sunflower seeds (yes, I LOVE broccoli and cauliflower raw, I actually hate it cooked). I used Ken's Buttermilk ranch dressing, but sparingly (we're trying to use up the stuff that isn't vegan rather than wasting it and money is tight, so we have to wait to replenish our stocks!) </span></div>

I made banana bread! My husband had made banana bread about a week ago, but used a regular recipe. About 10 minutes before my bread was done, my entire house smelled like cinnamon and nutmeg.</span><br />

<span style="font-family: Verdana, sans-serif;">When I pulled the loaf out, it was smaller than my hubby's banana bread, but WOW did it taste SO much better! My daughter and I ate it in one day (hence why I don't have a picture!) </span><br />

<span style="font-family: Verdana, sans-serif;">I'll make more in a couple days and share what it looks like. I really thought the bread would taste horrible. Applesauce instead of eggs? I've been wanting to get away from eggs for months now, and this is my step toward making veganism in my home a reality. </span><br />

<span style="font-family: Verdana;">1/4 cup canola oil</span><br />
<span style="font-family: Verdana;">1/2 cup sugar</span><br />
<span style="font-family: Verdana;">2 tablespoons molasses</span><br />
<span style="font-family: Verdana;">2 cups all purpose flour</span><br />
<span style="font-family: Verdana;">3/4 teaspoon baking soda</span><br />
<span style="font-family: Verdana;">1 teaspoon cinnamon</span><br />
<span style="font-family: Verdana;">1/4 teaspoon ground nutmeg</span><br />

Top should be lightly browned and knife should come out clean when inserted.</span><br />

I used Motts Cinnamon Applesauce instead of plain applesauce, I added a tablespoon of vanilla, and because I didn't have molasses I used 2 tablespoons of brown sugar. This might be why the loaf didn't come out as large as a normal loaf, and I thought it would be really dry, but it came out wonderfully moist and VERY tastey! Anything banana. You know those little bananas in the Runts candy boxes? I always gave or threw them away. In December 2010 however I found out that my potassium levels were dangerously low. So low in fact it caused heart palpitations and excess swelling in my knees after injury. So, I started eating bananas (I get really nauseated if they aren't green ones) and bought a potassium supplement. I was getting no where near the 4700mg we need daily. I was getting maybe 1000mg, and that's being generous. </span><br />

In a large bowl combine flour, baking powder, baking soda, cinnamon, salt, nutmeg, and ginger. Make a well in the center of flour mixture; set aside.</span><br />

<span style="font-family: Verdana;">2) In a medium bowl combine eggs, banana, sugar and oil. Add egg misture all at once to flour mixture. Stir just until moistened (batter should be lumpy). Fold in walnuts. Spoon batter into prepared pan(s). If desired sprinkle with Steusel-Nut Topping over batter.</span><br />

<span style="font-family: Verdana;">3) Bake for 55-60 minutes for 9x5x3" loaf pan or 40-45 minutes for 7 1/2 x 3 1/2 x 2" loaf pans, or until a wooden toothpick inserted near center(s) comes out clean. If necessary, cover loosley with foil the last 15 minutes of baking to prevent over-browning. Cool in pan(s) on a wire rack for 10 minutes. Remove from pan(s). Cool completely on rack. Wrap and store overnight before slicing. </span><br />

<span style="font-family: Verdana;">In a bowl combine 1/4 cup packed brown sugar, and 3 tablespoons all purpose flour. Using pastry blender, cut in 2 tablespoons butter until mixture resembles coarse crumbs. Stir in 1/3 cup walnuts.</span><br />

I'm not a fan of walnuts so we didn't have any in the house. But as you can see the bread came out beautifully. I know it's not vegan, but we're inching our way toward vegan. Greg is quite reluctant to go vegan, so I've gone as vegan as I could without cutting out the eggs! </span><br />

I was 250lbs, and only 5'9" tall. I was pretty depressed about my weight, and I knew I had to do something about it. </span><br />

<span style="font-family: Verdana, sans-serif;">I started working out in November 2010 when the Kinect came out for the Xbox 360. The game Your Shape Fitness Evolved came out shortly thereafter, and I got my hands on it for $20! (These games are usually $59.99!) </span><br />

<span style="font-family: Verdana, sans-serif;">I was psyched, I immediately started working out daily with the "game" (see my other blog, <a href="http://www.kinectweightloss.com/" target="_blank">My Kinect Weight Loss Success Story</a>) and the results were quickly realized. My energy levels after about 2 weeks of daily workouts were much higher than they had been. I felt great. My chronic pain was much more manageable. </span><br />
<br />
<span style="font-family: Verdana;">I started doing a lot of research on vegetarianism, I felt drawn to it. I was never really big on meat, I only ate Beef and turkey, and the occasional chicken and bacon. I was very picky about the meat that I ate as well, if the steak was on the bone, I wouldn't eat it, if there was a gristle of fat, I'd cut it out. </span><br />
<br />
<span style="font-family: Verdana;">Needless to say my dog ate more of the meat than I did! So going vegetarian wasn't as hard for me as it might be for most. My hubby found it a bit more difficult I think. (We kinda tricked my daughter!) He did it for the ethical reasons, and the fact that most meat is contaminated by hormones and antibiotics. </span><br />
<br />
<span style="font-family: Verdana;">I agree with him, the way we treat animals is inhumane and the drugs and hormones we put in their food end up in our bodies as well, and that has to screw with our DNA. I know, vegetables are grown with pesticides, but we buy organic, and we grow some of our own. </span><br />
<br />
<span style="font-family: Verdana;">I went to my family doctor in February and my blood pressure (with medication) was 136/94. The 94 worried him. I have to admit, it was high. I'd never had any trouble with my blood pressure until I got pregnant with my daughter and then it just never went back down. </span><br />
<br />
<span style="font-family: Verdana;">I now believe that was due to the fact that I had put on an extra 40lbs bringing me up to 250. I went back to my doctor in July and asked my doctor about increasing the dosage on my medication. I had lost 70lbs by then, and my blood pressure in the afternoon was 134/72! </span><br />

<span style="font-family: Verdana;">My doctor said if I stayed on the diet and lost a few more pounds, I may not need the meds at all. I went back 2 days later to get my female checkup and I had worked out that morning. My blood pressure that morning was AMAZING!! It was 104/72! That is a testament to how much exercise can lower your blood pressure! </span><br />

<span style="font-family: Verdana;">This blog is going to be all about my journey through vegetarianism. I'm finding more and more recipes and I want to journal all about them. I'm also leaning toward going vegan, and I want to journal my thoughts about why, and what type of research I've found. </span><br />
